Dark Chocolate and Walnut Fudge

This first recipe is dedicated to my Father-in-Law, John who absolutely loves this dark chocolate and walnut fudge recipe. He has had some pretty significant health issues lately, but this fudge makes him feel a whole lot better. He even calls it his "Medicinal Fudge" even though there's no medicine per se in the recipe. However, there are healthy ingredients that add to its plain ole mouthwatering goodness! My poor Mother-in-Law can't even shave off even the tiniest sliver to have a taste because he won't share the batch I made him for Christmas. It's hilarious! He even told me this past weekend that it was time for me to get on my apron and start making him another batch because he's almost out! LOL

This decadent fudge recipe is perfect for Valentine's Day, Christmas, Girls' night out/in, or just as a special treat! It's Paleo, refined sugar free, gluten-free and can be made dairy and nut free as well. It can be made ahead, it stores well in the refrigerator for weeks and a little bit goes a long way.

Pair this amazing fudge with a glass of your favorite champagne or red wine and share it with that special someone, or keep it for yourself for when you are craving chocolate but don't want to compromise your fitness goals. Enjoy!
